SPRING GREENS WITH BLUEBERRY BALSAMIC DRESSING
Recipe by MARIA KOEHN @StapletonSausage Prepare Duck Blueberry sausages on the BBQ or Stove Top to an internal temperature of 74C or 165F Fresh Ingredients: 4 cups mixed spring greens 1 cup sliced strawberries 1 cup blueberries 1/2 cup crumbled blue cheese or goat cheese 1/2 cup toasted walnuts Garnish with Micro Greens 🌱 Salad Dressing: 1/4 cup fresh blueberries 1/4 cup balsamic vinegar 1/4 cup olive oil 1 1/2 teaspoons honey 1 1/2 teaspoons Dijon mustard salt and ground black pepper to taste Blend dressing ingredients in a blender until smooth. Pour desired amount of dressing over fresh greens just before serving and toss to coat. Add fresh berries, cheese and nuts to fresh greens and gently toss. Plate salad and place sliced Duck Blueberry Sausage on top of greens. Garnish with berries, cheese and nuts and drizzle dressing over sausage. Enjoy! |
